We’re obsessed with pairing cheese with all manner of things and this is our latest find. Scratch British Rum (in this case their Golden rum) is a delicious award winning botanical rum, matured in oak casks. Flavours of caramel, cinnamon and toffee apples are present and they work in perfect harmony with the butterscotch and caramel flavours in its cheesey partner, an 18 month matured Comté. A 24 month Comté also works very well incidentally.

For this pairing we recommend a splash of tonic in the rum to help the flavours blend with the cheese. If you want to kick it up a notch, and bear with us here, a little drizzle of salted caramel on the Comté gives the whole pairing an unusual, but tasty twist.
